Recipe: Pumpkin soup

Ingredients:
- 1 butternut squash, peeled and cubed
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 small carrots, diced
- 2 pinches cinnamon
- 1 tsp fennel seeds
- 1/2 apple, peeled and diced
- 1 vegetable bouillon cube
- Water
- Olive oil
Optional:
- Heavy cream
- Pumpkin seeds
Additional Equipment:
- Immersion blender to puree the soup
- Dutch oven (e.g., our 6Qt without legs or Limited Edition)
- BBQ/Camp Stove
- Wood/charcoal/briquettes
- Fire starters
Instructions:
- Sauté the pumpkin cubes in a splash of olive oil over low heat.
- After a few minutes, add the chopped onion, carrots, garlic, cinnamon, and fennel seeds, and cook for a few more minutes.
- Add the apple and the vegetable stock cube.
- Fill the pot with water until the ingredients are just covered, and let it cook for 10-15 minutes.
- For a smooth soup, blend it with the immersion blender.
- Serve with heavy cream and pumpkin seeds.
