      Recipe: Pumpkin soup

      Ingredients:

      • 1 butternut squash, peeled and cubed
      • 1 onion, chopped
      • 2 cloves garlic, minced
      • 3 small carrots, diced
      • 2 pinches cinnamon
      • 1 tsp fennel seeds
      • 1/2 apple, peeled and diced
      • 1 vegetable bouillon cube
      • Water
      • Olive oil

       

      Optional:

      • Heavy cream
      • Pumpkin seeds

      Additional Equipment:

       

       

      Instructions:

      1. Sauté the pumpkin cubes in a splash of olive oil over low heat.
      2. After a few minutes, add the chopped onion, carrots, garlic, cinnamon, and fennel seeds, and cook for a few more minutes.
      3. Add the apple and the vegetable stock cube.
      4. Fill the pot with water until the ingredients are just covered, and let it cook for 10-15 minutes.
      5. For a smooth soup, blend it with the immersion blender.
      6. Serve with heavy cream and pumpkin seeds.
