      Recipe: Dutch Oven Spareribs

      Ingredients

      (Serves 4)

      • 3 racks of spareribs
      • Oil
      • 2 onions
      • 1 red bell pepper
      • 1 bunch of parsley
      • 1 bottle of dark beer
      • 2 tablespoons of barbecue rub of your choice
      • Barbecue sauce (optional)

      Preparation

      1. Prepare the Ingredients:

        • Cut the spareribs in individual ribs.
        • Finely chop the onions.
        • Cut the bell pepper into small pieces.
        • Finely chop the parsley.

      1. Heat the Dutch Oven:

        • Hang the Dutch oven a fire and add a splash of oil.
        • Brown the spareribs until they turn light brown.
      2. Add Vegetables and Seasonings:

        • Add the chopped onion and bell pepper to the Dutch oven.
        • Pour in the beer, add the barbecue rub and the chopped parsley.
        • Mix all well.

      1. Cook the Ribs:

        • Hang the Dutch oven a bit higher above the fire and let the ribs stew with the lid on.
        • Occasionally check if there is enough liquid in the pan, adding more beer or water if needed.
        • The ribs are done when the meat starts to pull back from the bone and comes off easily. This will take approximately 1½ to 2 hours.

      1. Finish (Optional):

        • You can eat the spareribs as they are, but for extra flavor, brush them with barbecue sauce.
        • Grill them briefly over the fire until the sauce begins to caramelize.
