Recipe: Bobotie
Ingredients:
- 500 grams of ground meat
- 230 grams of yellow or white rice
- 3 bay leaves
- 1 tsp ginger powder
- 1 tsp cinnamon
- 1 tsp Indian garam masala
- 2 tsp turmeric
- 1 tsp cumin
- 70 grams raisins
- 300 ml milk
- 4 slices white bread
- 3 eggs
- A splash of red wine vinegar
- 1 onion
- 3 cloves garlic
- Salt and pepper
- Olive oil
Additional needs:
- Large skillet or paella pan
- BBQ pan, Dutch Oven, or saucepan for cooking rice
- Mixing bowl or large dish
- BBQ, Camp Stove, or Kibo Grill

Method:
- Light your BBQ and let it reach a temperature of 150 degrees Celsius.
- Cook the rice in a pan according to the package instructions.
- Chop the onion and garlic and sauté them with olive oil in the skillet.
- Cut the crusts off the bread and let them soak in a bowl with 180 ml milk and the eggs.
- When the onion and garlic are sautéed, add the dry spices and stir well. Then add the ground meat and cook thoroughly with the spices.
- Add the bread mixture and stir well, then add the raisins and place the skillet on indirect heat.
- Deglaze with red wine vinegar and stir well, season with salt and pepper.
- Put a lid on the skillet and let it sit for 10 minutes with the bay leaves.
- Add the remaining milk and stir well. Then place it on indirect heat without a lid at 180 degrees Celsius and let the bobotie cook for 20 minutes.
- Serve with a bowl of rice, green beans, and dried onions.
